Spinach Artichoke Dip
Ingredients
2, 10 ounce boxes frozen, chopped spinach
2, 14 ounce cans or jars of artichoke hearts (I used brined)
1 tablespoon extra-virgin olive oil
1 small onion, diced (about 1 cup)
2 garlic cloves, minced
1 1/2 teaspoons sea salt (adjust to taste and depending on how salty the artichoke hearts are)
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4-1/2 teaspoon cayenne pepper (to taste)
1 tablespoon lemon juice
1 1/2 – 2 cups (approximate) cashew cream (1 cup raw cashews to make)

1 tablespoon extra-virgin olive oil
1 small onion, diced (about 1 cup)

1 1/2 teaspoons sea salt (adjust to taste and depending on how salty the artichoke hearts are)
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4-1/2 teaspoon cayenne pepper (to taste)
1 tablespoon lemon juice
1 1/2 – 2 cups (approximate) cashew cream (1 cup raw cashews to make)
Instructions
- Soak 1 cup cashews in warm water for 15 minutes and drain
- In food processor or blender mix 1 cup of the soaked cashews and 1 cup new warm water until creamy
- Defrost the spinach and squeeze out the excess water. Set aside.
- Drain and roughly chop the artichokes.
- Sauté the onions in the olive oil until translucent, about 10 minutes. Add the minced garlic and cook for another minute.
- Stir in the chopped artichokes, salt, onion powder, garlic powder, black pepper and cayenne and heat through.
- Add in the spinach and lemon juice and stir until heated through.
- Stir in the cashew cream.
Protein Packed Blondes
Ingredients
1 cup natural creamy peanut butter (preferably organic)
⅓ cup honey or coconut nectar
2 whole egg
¼ teaspoon sea salt
½ teaspoon baking soda
½ cup dark chocolate chips (I used one dark chocolate bar, 85%, chopped up)
1 scoop vanilla plant protein powder (I used Garden of Life's pea, hemp, rice blend)

Instructions
- Preheat oven to 350F and grease an 8″ square pan with butter or coconut oil.
- In a small bowl, mix the peanut butter, honey, egg, salt and baking soda until well combined, then fold in the chocolate chips.
- Pour the batter into the greased pan, and use a spatula to smooth the top.
- Bake at 350F for 20-25 minutes, or until the top is a light golden brown. (it only took 20 minutes in my oven)
- Let cool, then cut into squares and serve!
Truffle Sliders
Slider Ingredients
1 lbs ground beef
3 tbsp truffle oil (or olive oil)
1.5 tps garlic powder
1.5 tsp onion powder
1 tsp sea salt
Bun Ingredients
2 thick yams sliced into ¼ inch thick rounds
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
1 tsp pepper or to taste
Instructions
For added flavor. Saute yellow onion slices in coconut oil for 5-10 minutes and add to sliders. You can also make your own ketchup!
Ketchup Ingredients
1 can (6 oz) tomato paste
2 tbsp vinegar or lemon juice
¼ tsp dry mustard
1/3 cup water
¼ tsp cinnamon
¼ tsp sea salt
1 pinch ground cloves
1/8 tsp cayenne pepper (optional)
Mix all ingredients and use.
Slider Ingredients
1 lbs ground beef
3 tbsp truffle oil (or olive oil)

1.5 tsp onion powder
1 tsp sea salt
Bun Ingredients
2 thick yams sliced into ¼ inch thick rounds
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
1 tsp pepper or to taste
Instructions
- Preheat grill to 350 degrees.
- In one bowel mix all slider ingredients and then form small slider size patties for cooking.
- Place patties on the bottom grill rack to start cooking. In a plastic bag toss bun ingredients to coat the yams well.
- Flip the patties and place the yam slices on the top rack. Cook patties until firm or to liking.
- Flip the yam slices and cook until soft.
- Assemble patties in between yam slices.
